On a cool morning you may find your bottle of coconut oil has turned white and solid. Nothing is wrong with it – this is a natural property of pure coconut oil.
The science in one line
Coconut oil is rich in saturated fats, which solidify at cooler temperatures. Pure coconut oil generally turns solid below about 24°C and becomes liquid again when it warms up.
How to melt it
- Keep the closed bottle in a bowl of warm (not boiling) water for a few minutes.
- Or leave it in a warm spot in your kitchen for a while.
- Avoid heating it directly on the stove in the bottle.
Melting and setting again does not affect the quality of the oil.
Storage tips
Store your coconut oil in a cool, dry place, away from direct sunlight, and always use a dry spoon. Once opened, it is best used within about three months.
